Homemade Irish Hop Lemonade

Ingredients

  • 150g sugar
  • 200ml water
  • 10g citrus-forward hop pellets (from a homebrew store)
  • Juice of 4 large fresh lemons
  • Sparkling water (to dilute)

Method

  1. Combine the sugar and water in a saucepan and bring to a simmer to dissolve the sugar.
  2. Turn off the heat, add the hop pellets, and let steep covered for 10 minutes.
  3. Strain the hopped simple syrup through a fine coffee filter or cheesecloth to remove all hop residue, then let cool completely.
  4. To serve, mix the cooled hop syrup with the fresh lemon juice in a large pitcher.
  5. Divide among glasses filled with ice and top up with crisp sparkling water. Garnish with lemon wheels.
