Ingredients

  • 50ml Irish whiskey
  • 25ml fresh lemon juice
  • 15ml simple syrup (1:1 sugar and water)
  • 1 fresh egg white (or 15ml aquafaba for a vegan alternative)
  • Angostura bitters and a lemon twist (for garnish)

Method

  1. Add the Irish whiskey, fresh lemon juice, simple syrup, and egg white to a cocktail shaker without ice.
  2. Shake vigorously for 10-15 seconds (this 'dry shake' emulsifies the egg white to build a luxurious foam).
  3. Add a handful of ice cubes to the shaker and shake again for another 10 seconds until frosty cold.
  4. Strain through a fine mesh strainer into a chilled coupe or rocks glass over fresh ice.
  5. Dot the foam top with a few drops of Angostura bitters and express a lemon twist over the glass.
