The Perfect Authentic Irish Coffee

Ingredients
- 150ml hot, strong, fresh black coffee
- 35ml premium Irish whiskey
- 1-2 tsp dark brown sugar
- 45ml double cream (slightly whipped but still pourable)
Method
- Pre-warm a heat-safe Irish coffee glass by filling it with boiling water for 1 minute, then discard the water.
- Pour the hot black coffee into the glass, leaving about 2cm of space at the top.
- Add the dark brown sugar and stir vigorously until completely dissolved (the sugar is essential; it helps the cream float).
- Stir in the Irish whiskey.
- Hold a warm teaspoon upside down just resting over the surface of the coffee. Slowly pour the slightly whipped double cream over the back of the spoon so it floats perfectly on top. Do not stir before drinking.
