Guinness Chocolate Cake with Cream Cheese Frosting

Ingredients

  • For the Cake: 250ml Guinness stout
  • 250g Irish butter
  • 75g cocoa powder
  • 300g caster sugar
  • 150ml sour cream or buttermilk
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 275g plain flour
  • 2.5 tsp bicarbonate of soda
  • For the Frosting: 300g cream cheese, 150g icing sugar, 150ml double cream

Method

  1. Preheat your oven to 180°C (160°C fan). Grease and line a 23cm (9-inch) springform cake tin.
  2. Pour the Guinness and butter into a large saucepan and heat gently until the butter melts. Whisk in the cocoa powder and sugar, then remove from heat.
  3. In a separate bowl, beat the sour cream, eggs, and vanilla extract together. Pour this into the saucepan mixture.
  4. Sift the flour and bicarbonate of soda together, then whisk into the wet ingredients until completely smooth.
  5. Pour into the cake tin and bake for 45-50 minutes until a skewer inserted into the center comes out clean. Leave to cool completely in the tin.
  6. For the frosting: Whip the cream cheese and icing sugar until smooth, then pour in the double cream and whip until thick and spreadable. Spread generously on top of the cooled cake to mimic a pint's creamy head.
