Cheddar, Stout & Wild Garlic Bread

Ingredients
- 400g plain white flour
- 1 tsp bicarbonate of soda
- 1 tsp salt
- 150g mature Irish cheddar cheese, grated
- A small handful of fresh wild garlic leaves, finely chopped (or 2 spring onions + 1 clove minced garlic)
- 200ml Irish stout or porter
- 150ml buttermilk
Method
- Preheat your oven to 190°C (170°C fan) and grease a baking tin or line a baking sheet.
- Sift the flour, bicarbonate of soda, and salt into a large bowl.
- Add most of the grated cheddar cheese (reserve a handful for the top) and the finely chopped wild garlic to the flour, tossing well to coat.
- In a jug, mix the stout and buttermilk together, then pour into the dry ingredients.
- Mix swiftly to form a soft dough. Shape into a rough artisan round loaf and place on your baking sheet.
- Cut a deep cross across the top, scatter the reserved handful of grated cheddar over the surface, and bake for 40 minutes until the cheese is bubbling and golden-brown, and the loaf sounds hollow when tapped.
