A base built around cassareep (a slow-reduced cassava syrup, processed to remove raw cassava's cyanogenic compounds), into which meat is slow-cooked over days, with cassareep's natural preservative properties allowing the pot to be continually replenished and kept going rather than made fresh each time.

Some households have maintained a continuously replenished pepperpot for extended periods, similar in spirit to a Chinese master stock though arrived at independently.

Storage

Given cassareep's preservative properties, a properly maintained pepperpot can be kept going, refrigerated between uses, for an extended period rather than being a single-batch dish.

Only use properly processed cassareep — raw cassava contains cyanogenic compounds that must be fully removed in processing. Chinese master stock (lu shui) is a structurally similar continuously replenished base, arrived at independently.
