Moqueca Base

A base of coconut milk and dendê (palm) oil, simmered with tomato, onion, and bell pepper, forming the foundation of moqueca baiana, Bahia's signature fish stew — notably, Southeastern Brazilian moqueca capixaba omits both coconut milk and dendê oil entirely.

Regional Variations

Moqueca capixaba (Espírito Santo state) is a meaningfully different, lighter preparation using annatto oil instead of dendê and no coconut milk — the two "moqueca" traditions are distinct enough to be considered largely separate dishes.

Storage

Refrigerate 2–3 days given the fish content; freezes reasonably well given the coconut and palm oil fat content.

Contains fish and shellfish depending on preparation — flag for allergen purposes. The Bahian/Capixaba naming distinction is significant enough to note explicitly rather than treating "moqueca" as one fixed recipe.
