Spanish Caldo / Sofrito Base

A base built by slowly cooking onion, garlic, tomato, and often bell pepper in olive oil until deeply softened and sweet (sofrito), then extended with stock or water into caldo, the foundational liquid for Spanish rice dishes and stews.

Regional Variations
Catalan sofrito differs somewhat from Andalusian and other regional versions in vegetable ratio and cooking time; some regions add a small amount of smoked paprika for depth.
Storage
Refrigerate 4–5 days; sofrito alone (before extending into full caldo) freezes exceptionally well in small portions.
The Puerto Rican and Dominican sofrito diverged significantly from this Iberian original after crossing the Atlantic, most notably dropping tomato in the Puerto Rican recaito version.
