Canh Chua Base (Vietnamese Sour Soup Base)
Southern Vietnam

A sour and sweet fish broth, soured with tamarind and sweetened with a touch of sugar, built with pineapple, tomato, okra, and bean sprouts alongside fish — a Southern Vietnamese comfort-food staple.
Flavor Profile
A balanced sweet-sour-savory profile, brighter and fruitier than most other regional sour broths given the pineapple.
Culinary Uses
Base and finished form of canh chua, typically served alongside rice as part of a full Vietnamese family-style meal.
Regional Variations
Some versions use tamarind concentrate while others use fresh tamarind pulp; catfish is the most traditional fish though other freshwater and saltwater fish are commonly substituted.
Storage
Refrigerate 2–3 days; best enjoyed fresh given the vegetable content.
Filipino sinigang is a structurally similar sour soup tradition, developed independently rather than derived from one another.
