Laksa Broth Base

A coconut curry broth built from a spice paste (rempah) of chili, shallot, galangal, and shrimp paste, simmered with coconut milk — the base of laksa, one of the defining dishes of Peranakan cuisine.

Regional Variations
Penang-style asam laksa is a structurally different, tamarind-based sour fish broth rather than a coconut curry — the two "laksa" traditions are significant enough to be considered largely separate dishes sharing only the name.
Storage
Refrigerate 2–3 days; freezes reasonably well given the coconut fat content.
Contains shellfish (shrimp paste) — flag for allergen purposes; note the Penang asam laksa naming distinction above to avoid treating all "laksa" as one broth style.
