Central Asia
Laghman Broth Base
Xinjiang / Uyghur cuisine, shared across Central Asia

A tomato-and-meat-based broth, spiced with cumin and chili, that forms the soup component of laghman when the dish is served in its brothy (as opposed to stir-fried) style.
Flavor Profile
Savory and tomato-forward with a warm cumin note and moderate chili heat.
Culinary Uses
Base for soupy laghman, into which hand-pulled noodles and vegetables are added.
Regional Variations
Stir-fried laghman uses the same base flavors but reduced to a thick sauce rather than a full broth — the two are considered variations of one dish family rather than separate dishes.
Storage
Refrigerate 3–4 days; freezes well.
Uyghur chili oil and sesame-garlic sauce are both commonly added to this broth at the table.
