Zirvak (Uzbek Plov Base)

A fried base of meat, onion, and carrot cooked down in oil or fat until deeply caramelized, forming the foundational layer over which rice is later cooked without stirring to make plov (Uzbek pilaf).

Best made fresh as part of the plov-cooking process; leftover zirvak (rare, since it's usually cooked directly into the full dish) keeps 2–3 days refrigerated.
