Sriracha
Si Racha, Thailand (original); globalized primarily via Huy Fong Foods, United States

A smooth, garlicky chili sauce originally from the Thai coastal town of Si Racha, globally popularized in a very different, sweeter, and thicker form by the California-based Huy Fong Foods (identifiable by its rooster logo), founded by a Vietnamese refugee.
Flavor Profile
Original Thai sriracha: thinner and more purely hot-sour. Huy Fong-style: thicker, sweeter, and more garlic-forward — most people's global reference point for the name.
Culinary Uses
All-purpose hot sauce for eggs, noodles, and nearly any savory dish; condiment ubiquitous in American and increasingly global fast-casual dining.
Regional Variations
"Sriracha" as a generic term now covers many unrelated commercial products worldwide, most bearing little resemblance to the original Thai sauce that inspired the name.
Storage
Refrigerate after opening; keeps many months given vinegar and sugar content.
One of the clearest examples of a name travelling further than the original product — most global "sriracha" consumption has little direct connection to Si Racha, Thailand's original condiment.
