Central/South America
Guasacaca
Venezuela

An avocado-based sauce of avocado, onion, bell pepper, cilantro, garlic, and vinegar, often described as Venezuela's answer to guacamole but distinctly saucier and more acidic.
Flavor Profile
Creamy and tangy, with avocado richness cut sharply by vinegar, more acidic than typical Mexican guacamole.
Culinary Uses
Condiment for arepas and grilled meats (particularly parrilla, Venezuelan barbecue); topping for empanadas.
Regional Variations
Some versions blend to a smooth sauce while others keep a chunkier, guacamole-like texture; bell pepper inclusion is more distinctive to guasacaca than to most guacamole recipes.
Storage
Best fresh; refrigerate 1–2 days as the avocado oxidizes.
Do not confuse with Mexican guacamole, a related but distinct preparation with a different ingredient balance and typically no vinegar or bell pepper.
