Regional Variations
Punjabi, Rajasthani, Andhra (avakaya), and Maharashtrian versions differ substantially in spice mix, oil choice, and heat level — avakaya in particular is notably hotter and more oil-heavy.
Storage
Properly cured in oil, keeps many months to over a year at room temperature.
This and Middle Eastern amba share a historical link through Iraqi-Jewish and Indian trading routes that carried mango-pickling traditions westward.
