A chunky, spicy vegetable relish of onions, tomatoes, carrots, and bell peppers, seasoned with curry powder and chili, cooked down to a jammy consistency. Developed in urban Johannesburg township cooking and now a braai (barbecue) staple nationwide.

Bean chakalaka (with added baked beans) is a common heartier variant; some versions are closer to a fresh salsa-like relish while others are cooked down into a thick chutney-like paste.

Storage

Refrigerate; keeps about a week. Freezes reasonably well given its cooked-vegetable base.
