The Quirky Foodster Team

Ingredients
- Red onions, very finely chopped — 1 kg (2.2 lb)
- Niter kibbeh (Ethiopian spiced butter) or ghee — 100 g (1/2 cup)
- Berbere spice blend — 60 g (6 tbsp)
- Garlic cloves, minced — 4
- Fresh ginger, grated — 15 g (1 tbsp)
- Tomato paste — 30 g (2 tbsp)
- Chicken stock or water — 250 ml (1 cup)
- Salt — to taste
Method
- Cook finely chopped onions in a dry, heavy-bottomed pot over medium-low heat (no oil initially), stirring frequently,
- for 20-25 minutes until they release their liquid and begin to soften.
- Add niter kibbeh, continue cooking onions until deeply golden and caramelised, another 15-20 minutes.
- Stir in berbere, garlic and ginger; cook 5 minutes, stirring constantly to bloom the spices without burning.
- Add tomato paste, cook 2 minutes, then gradually add stock or water.
- Simmer 20-30 minutes until thickened and deeply flavoured; season with salt to taste.
Cultural Background: A deeply spiced onion and berbere sauce forming the heart of doro wat, Ethiopia's iconic chicken stew often considered the national dish, this base sauce reflects hours of slow-cooked onion caramelisation combined with the complex Ethiopian spice blend berbere.
Tips: • Cooking the onions without oil initially (dry) is a traditional technique that concentrates their sweetness before the fat is added. • Long, patient cooking of both the onions and the spice blend is essential — this sauce cannot be rushed.
Variations: • This base becomes doro wat when chicken pieces and hard-boiled eggs are added and simmered directly in the sauce. • Adjust berbere quantity for a milder or spicier final result.
Storage: Refrigerate up to 4 days, or freeze up to 3 months.
Reheating: Reheat gently over low heat, stirring occasionally, adding stock if too thick. Nutrition (per serving) Approx. 90 kcal, 1.5 g protein, 6 g fat, 8 g carbohydrate per 100 g serving.
FAQs: What is this sauce used for? As the base for doro wat (Ethiopian chicken stew) and other wat (stew) dishes, typically served with injera flatbread. What is niter kibbeh?
