Coconut Chutney

Ingredients
- Fresh grated coconut — 150 g (1.5 cups)
- Roasted chana dal — 30 g (2 tbsp)
- Green chiles — 2
- Fresh ginger — 10 g (1 tbsp)
- Water — 100 ml (1/3 cup + 1 tbsp)
- Salt — 5 g (1 tsp)
- Mustard seeds and curry leaves (for tempering) — 5 g and 8 leaves (1.5 tsp and 8 leaves)
- Dried red chile and oil (for tempering) — 1 and 15 ml (1 and 1 tbsp)
Method
- Combine grated coconut, roasted chana dal, green chiles and ginger in a blender.
- Add water and blend to a smooth paste; season with salt.
- For tempering: heat oil in a small pan; add mustard seeds and let them pop, then add curry leaves and dried red
- chile.
- Fry briefly, about 30 seconds, until fragrant.
- Pour the tempering over the blended chutney; mix well before serving.
