Method

  1. Finely mince or process chiles and garlic together.
  2. Combine vinegar, sugar, water and salt in a saucepan; bring to a simmer, stirring until sugar dissolves.
  3. Add minced chile-garlic mixture; simmer 5-8 minutes until slightly reduced.
  4. Stir in cornstarch slurry, simmer 2-3 minutes more until glossy and thickened.
  5. Cool before bottling; the sauce thickens further as it cools.
