Ingredients

  • Mayonnaise — 200 g (3/4 cup + 2 tbsp)

  • White wine vinegar — 5 ml (1 tsp)

Method

  1. Combine mayonnaise with curry powder and turmeric in a mixing bowl; stir until evenly coloured pale yellow.
  2. Fold in chopped piccalilli or pickles and capers.
  3. Stir in sugar and vinegar.
  4. Season with salt to taste.
  5. Chill at least 20 minutes before serving to let flavours meld.
