Cultural Background: A rich, nutty sesame-based dipping sauce, goma dare is a beloved accompaniment to shabu-shabu hot pot and cold noodle dishes, its creamy texture and deep sesame flavour offering a comforting counterpoint to lighter, citrus-based ponzu.
Tips: • Adding the water gradually while whisking prevents the sesame paste from seizing into clumps. • Japanese neri goma (toasted sesame paste) gives the most authentic result, though tahini is a reasonable substitute.
Variations: • Add a small amount of grated garlic for extra depth. • Use as a dressing for cold noodle salads as well as a hot pot dipping sauce.
Storage: Refrigerate in an airtight container up to 1 week.
Reheating: Not applicable; served cold or at room temperature. Nutrition (per serving) Approx. 55 kcal, 1.5 g protein, 4.5 g fat, 3 g carbohydrate per 15 ml serving.
