Ingredients

  • Soy sauce — 80 ml (1/3 cup)
  • Mirin — 80 ml (1/3 cup)
  • Sake — 30 ml (2 tbsp)
  • Sugar — 30 g (2 tbsp)
  • Fresh ginger, grated (optional) — 5 g (1 tsp)

Method

  1. Combine soy sauce, mirin, sake and sugar in a saucepan.
  2. Whisk together until sugar dissolves.
  3. Bring to a gentle simmer over medium heat.
  4. Simmer 8-10 minutes, stirring occasionally, until reduced by about a third and slightly syrupy.
  5. Stir in grated ginger if using; cool slightly before using as a glaze.
