Baijiu

China's most consumed spirit by volume (and, by some measures, the most consumed spirit in the world), typically distilled from sorghum using a unique solid-state fermentation process with a fermentation starter called qū, producing a wide range of intensely aromatic styles largely unfamiliar to Western palates but central to Chinese dining and toasting culture.
