Must be made in the USA, from a mash of at least 51% corn, distilled to no more than 160 proof, aged in new charred oak barrels. Straight bourbon must be aged at least 2 years. Typically sweeter and fuller-bodied than Scotch, with vanilla and caramel notes from the new oak.

Sweet, caramel, vanilla, full-bodied.
Bourbon's sweetness balances savory char on grilled meat, and pairs well with chocolate desserts.
