The stone pestle used with a molcajete mortar to grind salsas, guacamole, and spice pastes, the volcanic-rock companion tool to one of the region's most iconic pieces of cookware.

Material & Construction

Carved from the same porous volcanic basalt as the molcajete it's paired with, sized to be gripped and used with a rolling or pounding motion.

Traditional Uses

Grinding tomatoes, chilies, garlic, and avocado directly in the molcajete, producing a coarser, more textured result than a blender.

Modern Availability / Equivalents

A blender or food processor is faster for volume, though many cooks maintain a tejolote-ground salsa or guacamole has a distinctly better texture.

Care & Maintenance

Rinse without soap, which the porous stone absorbs; a new tejolote and molcajete pair should be "cured" by grinding rice or salt before first food use to remove loose grit.
