Citrus Zester

France and the wider European tradition

A small hand tool with a row of sharp round holes used to remove fine, thin strips of citrus peel (zest) without taking the bitter white pith underneath.

A short stainless steel blade with a row of small sharp-edged holes along one edge, fitted with a simple wooden or plastic handle.

Traditional Uses

Removing fine curls of lemon, orange, or lime zest for flavoring baked goods, sauces, and cocktails, and for decorative garnish.

Modern Availability / Equivalents

A rasp-style Microplane grater is now the more common modern tool for the same task, producing a finer, more evenly distributed zest.

Care & Maintenance

Rinse promptly after use, since citrus oils and pith can dry and clog the small holes if left uncleaned.
