Scotch Hands

British Isles (Scotland and Northern England)

A pair of ridged wooden paddles used to shape softened butter into neat blocks or pats by hand, pressing and rolling the butter between the two paddles.

Material & Construction

Two matching flat wooden paddles, one or both faces ridged with fine grooves, sized to be held one in each hand.

Traditional Uses

Working softened butter between the two ridged paddles to shape it into decorative pats or rolls, historically a farmhouse dairy task done by hand before commercial packaging.

Modern Availability / Equivalents

Pre-packaged butter has made this largely unnecessary in most households; the paddles are now mostly used for decorative butter presentation or by dedicated home dairy enthusiasts.

Care & Maintenance

Rinse in cool water (hot water can melt residual butter into the grain) and dry fully; occasional light oiling helps prevent the wood from drying out.
