Spurtle

Scotland

A narrow, rounded wooden stick used specifically for stirring porridge, its slim profile designed to move through the pot without the cutting or dragging action a flat spoon edge would create, which can make porridge gluey.

Material & Construction

Carved from a single piece of hardwood, typically 25–30 cm long, rounded and slightly tapered with no flat blade at all.

Traditional Uses

Stirring porridge in a continuous circular motion to prevent lumps and scorching without breaking down the oats' structure the way a flat-edged spoon can.

Modern Availability / Equivalents

A wooden spoon can substitute in a pinch, though traditional cooks maintain it produces a noticeably different, gluier porridge texture.

Care & Maintenance

Hand-wash and dry; occasional oiling keeps the wood from drying and cracking with repeated hot-porridge contact.
