Extra-long chopsticks used exclusively for cooking rather than eating — frying, plating, and handling hot food — kept distinct from the shorter chopsticks used at the table.
Material & Construction
Plain wood or bamboo, typically 30–40 cm long, longer and often thicker than eating chopsticks to keep the hand well away from hot oil or a hot pan.
Traditional Uses
Turning food while frying, plating delicate items precisely, and mixing or beating eggs and batters where fine control is more useful than a whisk's volume.
Modern Availability / Equivalents
Standard kitchen tongs or a pair of long wooden chopsticks bought for general use serve the same purpose in non-Japanese kitchens.
Care & Maintenance
Wipe dry after use and avoid prolonged soaking; occasional oiling helps prevent the wood from drying out with repeated heat exposure.
