Kafgir (Plov Skimmer)

Uzbekistan, Tajikistan, and the wider Central Asian plov tradition

A large, deep, perforated spoon used to lift rice, meat, and vegetables from the bottom of a large plov cauldron without disturbing the layered structure of the dish.

Material & Construction

A deep, wide metal bowl with drainage holes, mounted on a long handle sturdy enough to reach into a large communal-sized kazan.

Traditional Uses

Serving plov directly from the cooking cauldron in a way that lifts a full cross-section of rice, meat, and vegetables together onto each plate.

Modern Availability / Equivalents

A large slotted spoon or Western serving spoon can substitute for smaller quantities, though it generally can't match the volume a proper plov kafgir moves.

Care & Maintenance

Hand-wash and dry; the deep bowl shape can trap oil and residue in the drainage holes if not rinsed thoroughly.
