Central Asia
Chekich
Uzbekistan and the wider Central Asian bread-baking tradition

A stamping tool with a pattern of small spikes or blades used to press a decorative, functional pattern into the center of non (flatbread) dough before it goes into the tandir.
Material & Construction
A wooden handle set with a circular pattern of short metal pins or a carved wooden disc, sized to stamp the center of a round loaf in a single press.
Traditional Uses
Stamping a decorative ring pattern into flatbread dough, which also serves the practical purpose of preventing the center from puffing up unevenly during baking.
Modern Availability / Equivalents
A fork, pushed repeatedly in a pattern, is the common improvised substitute; dedicated chekich are sold in Central Asian markets and specialty bakeware shops.
Care & Maintenance
Wipe clean of dough residue and dry; metal-pinned versions should be dried promptly to prevent rust on the pins.
