Aleppo Falafel Scoop

Levant (Syria, Lebanon, Palestine, Jordan)

A hand-held scoop with a spring-loaded lever that shapes falafel mixture into a uniform disc and releases it directly into hot oil, standard equipment at falafel stands throughout the Levant.

Material & Construction

Stamped or cast metal body with a hinged, spring-loaded plate that compresses the chickpea mixture into shape and ejects it with a squeeze of the handle.

Traditional Uses

Rapid, uniform shaping of falafel for high-volume frying, allowing a single vendor to produce consistent patties at speed during busy service.

Modern Availability / Equivalents

Sold globally as a "falafel scoop" and widely available in Middle Eastern grocery and cookware stores; hand-shaping with two spoons is the fallback without one.

Care & Maintenance

Rinse immediately after use before oil residue hardens in the hinge; dry fully to prevent rust on the spring mechanism.
