Africa

Canari

West Africa, widespread (Nigeria, Senegal, and neighboring countries)

A large, unglazed earthenware water jar, prized for its ability to keep water cool through evaporative cooling as moisture slowly seeps through the porous clay walls and evaporates from the surface.

Material & Construction

Unglazed, porous fired clay, deliberately left unsealed on the exterior to allow the evaporative cooling effect to function.

Traditional Uses

Traditional household water storage and cooling, predating widespread refrigeration and still in common use in many households; also occasionally used for fermenting or storing grain-based beverages.

Modern Availability / Equivalents

Still produced and sold locally by traditional potters across West Africa; no close manufactured equivalent exists in most Western kitchenware markets, since the cooling function depends specifically on the clay's porosity.

Care & Maintenance

Rinse and air dry; avoid soap, which can clog the clay's pores and reduce the cooling effect; periodic light scrubbing with sand or a natural abrasive removes mineral buildup traditionally.
