- A variant dashi made by steeping dried whole sardines (niboshi) instead of, or alongside, katsuobushi, producing a stronger, more assertively fishy stock than standard kombu-katsuo dashi.

Regional Variations: Some versions remove the bitter heads and innards of the niboshi before steeping to produce a cleaner-tasting stock; ratios of niboshi to water vary by desired intensity.
Storage: Best used fresh; refrigerate up to 2 days.
