  • Cumin seed — 1 tbsp
  • Black peppercorns — 1 tsp
  • Whole cloves — 2
  • Small cinnamon stick — 1
  • Green cardamom pods — 2
  • Bay leaf — 1

Method

  1. Add the whole spices directly to the cooking water or to oil before adding rice, in the manner of a pilaf.
  2. Optional light toasting of the whole spices in a small amount of oil or ghee before adding rice and water, similar to a pilaf technique.
