Ingredients

  • A lighter
  • more floral formulation than the general-purpose advieh: dried rose petal
  • cinnamon
  • cumin
  • and often dried barberry or a small amount of saffron ground in

Method

  1. Toast the toastable components, cool, grind, then combine with rose petal and any non-toasted additions.
  2. Light toasting, given the blend's role flavoring delicate rice dishes rather than long-simmered stews.

Origin: Iran — the specific rice-dish (polo) sub-variant of advieh.

Use: Mixed directly into rice during the final steaming stage of Persian polo (mixed rice) preparations.

Classic Dishes: Zereshk polo (barberry rice); various other jeweled and mixed rice dishes.

Storage: Keeps 2-3 months sealed and dark.

Variations: Distinguished from advieh-e khoresh by its lighter, more floral, less black-pepper-forward profile suited to rice rather than long-simmered meat stews.
