Ingredients
- Dried chile powder (a mix of mild and hot varieties) — 1/4 cup
- Paprika — 2 tbsp
- Fenugreek seed — 1 tbsp
- Ginger — 1 tbsp
- Korarima (Ethiopian cardamom) — 1 tsp
- Black pepper — 1 tsp
- Coriander seed — 1 tsp
- Cinnamon — 1/2 tsp
- Cloves — 1/2 tsp
- Nutmeg — 1/2 tsp
- Salt — 1 tsp
Method
- Toast the whole spices (fenugreek, korarima, coriander, cinnamon, clove) separately from the chile powder and paprika, cool, then grind everything together.
- Essential for the whole-spice components; the chile powder itself is typically not further toasted.
Origin: Ethiopia and Eritrea — the foundational spice blend of Ethiopian/Eritrean cuisine.
Use: The foundational seasoning for the great majority of Ethiopian and Eritrean savory stews (wat).
