Ingredients
- Shahi jeera as the dominant ingredient
- combined with a lighter touch of green cardamom
- cinnamon
- and clove than standard garam masala
Method
- Toast whole spices, cool, grind.
- Light toasting, as shahi jeera's delicate aroma can be diminished by over-toasting.
Origin: North India, built around premium black cumin (shahi jeera, Bunium persicum).
Use: A premium finishing spice for rich rice and meat dishes where the specific smoky-resinous character of true black cumin is wanted over standard garam masala.
Classic Dishes: Premium biryani and pulao preparations; korma.
Storage: Keeps 2-3 months sealed and dark.
Variations: Distinguished from standard garam masala primarily by the deliberate emphasis on shahi jeera over the more common cumin/coriander base.
Substitutions: Pre-made commercial garam masala varies enormously in quality; a fresh, home-toasted-and-ground version is markedly more aromatic than most shelf products. Garam masala with toasted ordinary cumin substituted if shahi jeera is unavailable.
