Ingredients
- Amchur powder as the dominant ingredient
- combined with cumin
- coriander
- black pepper
- and a touch of chile powder
Method
- Combine pre-ground ingredients directly.
- Not applicable.
Origin: North India — a tart, amchur-forward variant closely related to chaat masala.
Use: A souring seasoning for vegetable dishes and snacks, similar in role to chaat masala but with amchur’s tartness more dominant.
Classic Dishes: Vegetable stir-fries; some potato preparations.
Storage: Keeps 6 months to a year sealed and dark.
Variations: Close enough to chaat masala that the two are sometimes used interchangeably.
Substitutions: A mix of lemon juice, salt, roasted cumin, and black pepper approximates the flavor direction without black salt’s distinctive sulfurous note. Chaat masala as a near-equivalent.
