Introduction: A rustic broth built from chuno, the freeze-dried potato that let Andean societies store food for years, simmered soft with fresh potato and herbs.
Cultural Background: Chuno, made by exposing bitter high-altitude potatoes to repeated freezing and sun-drying, is one of the Inca Empire’s most significant food technologies, enabling the extensive qullqa storehouse system described by chroniclers and confirmed archaeologically; it remains a staple across the Bolivian and Peruvian altiplano today.
Tips: – Chuno must be soaked well ahead (overnight) to rehydrate; do not attempt to cook it directly from dry. – The spongy, slightly tangy texture of chuno is distinctive and different from fresh potato; do not expect it to soften into the same texture.
Variations: – Naturally vegan as written. – Some highland versions add dried llama meat (charqui) to this broth for a heartier meal; kept plain here for a lighter soup.
Storage: Refrigerate covered for up to 3 days.
Reheating: Reheat gently in a pot over low heat with a splash of water for 5-6 minutes, stirring occasionally.
