Sweet Whiskey & Honey French Toast
An indulgent, sweet breakfast dish turning stale brioche or traditional white pan bread into a rich treat. The egg custard soaking liquid is heavily scented with sweet vanilla and smooth Irish whiskey.

Ingredients
- 4 thick slices of brioche or white farmhouse bread
- 2 large eggs
- 50ml single cream or whole milk
- 1.5 tbsp smooth Irish whiskey
- 1 tsp vanilla extract; 1/2 tsp ground cinnamon
- 20g butter (for frying)
- Irish honey or maple syrup to serve
Method
- In a wide, shallow bowl or dish, whisk together the eggs, cream, Irish whiskey, vanilla extract, and ground cinnamon until completely combined.
- Place a slice of bread into the egg custard mixture, letting it soak for 30-45 seconds, then flip to soak the other side thoroughly.
- Melt the butter in a large non-stick frying pan over medium heat until foaming.
- Transfer the soaked bread carefully to the hot pan. Fry for 3-4 minutes on each side until puffing up, golden-brown, and caramelized on the surface.
- Serve hot stacked on plates, heavily drizzled with warm honey or syrup, and dusted with a touch of extra cinnamon.
