  • Vegetable oil, for deep-frying

Method

  1. In a large bowl, mix the flour, sugar, yeast, salt and nutmeg.
  2. Gradually whisk in the warm water until you have a smooth, thick, elastic batter (thicker than pancake batter, similar to a very thick cake batter).
  3. Cover with a damp towel and leave in a warm place for about 1 hour, until doubled in size and bubbly.
  4. Heat oil in a deep pot to 170-180C (340-350F).
  5. Using a wet hand or spoon, scoop small portions of batter and drop directly into the hot oil (a wet hand helps the batter release cleanly into rounds).
  6. Fry in batches for 3-4 minutes, turning occasionally, until deep golden brown and cooked through.
