Ingredients

- Water — 1.5 L (6 cups)
- Sugar, or to taste — 200 g (1 cup)
- Juice of 2 limes
- Extra water, for diluting — to taste
Method
- Grate or blend the ginger with a splash of the water until finely pulped.
- Bring the remaining water to a boil, add the ginger pulp, then remove from heat and let steep, covered, for at least 4 hours or overnight.
- Strain the mixture through a fine sieve or muslin cloth, pressing to extract as much liquid as possible. Discard the solids.
- Stir in the sugar until fully dissolved, then add the lime juice.
- Taste and dilute with extra cold water to reach your preferred strength and sweetness.
- Chill thoroughly and serve over ice.
