Ingredients
- Plain flour, plus extra for dusting — 500 g (4 cups)
- Cold butter, cubed — 250 g (1 cup + 2 tbsp)
- Salt — 1 tsp
- Cold water — 120 ml (1/2 cup)
- Egg, beaten (for glazing) — 1
- Minced (ground) beef — 300 g (10oz)
- Onion, finely chopped — 1
- Carrot, finely diced — 1
- Tomato paste — 2 tbsp
- Curry powder — 1 tsp
- Scotch bonnet pepper, finely chopped (optional) — 1
- Salt and black pepper, — to taste
Method
- Rub the cold butter into the flour and salt until it resembles breadcrumbs, then mix in cold water gradually to form a firm dough. Wrap and chill for 30 minutes.
- Meanwhile, fry the onion and carrot in a little oil for 3-4 minutes, then add the minced beef and brown thoroughly.
- Stir in the tomato paste, curry powder, Scotch bonnet, salt and pepper. Cook for 8-10 minutes until thick and no liquid remains. Let cool.
- Preheat the oven to 200C (400F). Roll out the pastry to about 4mm thick and cut into 12 circles.
- Spoon a heaped tablespoon of the cooled filling onto one half of each circle, fold over and crimp the edges firmly with a fork to seal.
- Place on a baking tray, brush with beaten egg, and bake for 25-30 minutes until golden brown and crisp.
