  • Hot water (for sauce) — 125 ml (1/2 cup)

Method

  1. Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. In a bowl, whisk the egg and sugar together until pale, then beat in the apricot jam and melted butter.
  3. Sift the flour, baking soda and salt together and fold into the egg mixture alternately with the milk and vinegar, mixing until just combined.
  4. Pour the batter into the prepared dish and bake for 35 to 40 minutes until risen, golden and a skewer comes out clean.
  5. While the pudding bakes, combine the sauce cream, butter, sugar and hot water in a small saucepan and warm gently until the sugar dissolves and the butter melts.
  6. As soon as the pudding comes out of the oven, pour the warm sauce evenly over the top, letting it soak in.
