  • Whole trout (about 300 g / 10 oz each), cleaned and gutted — 4
  • Lemons, one sliced, one juiced — 2
  • Garlic, thinly sliced — 4 cloves

  1. Pat the trout dry inside and out with paper towel.
  2. Season the cavity of each fish generously with salt and pepper, then stuff with lemon slices, garlic and a few parsley sprigs.
  3. Brush the outside of each fish with olive oil and season the skin with salt and pepper.
  4. Preheat the grill to medium-high heat and lightly oil the grates.
  5. Grill the trout for 6–7 minutes per side, turning once carefully, until the skin is crisp and the flesh flakes easily with a fork.
  6. Drizzle with fresh lemon juice, scatter over chopped parsley, and serve immediately.
