  • Pork belly, cut into small cubes — 150 g (5 oz)
  • Garlic, finely grated — 2 cloves
  • Sweet paprika — 1 tsp
  • Salt — 1/2 tsp
  • Black pepper — 1/4 tsp
  • Dark rye farmhouse bread, to serve — 8 slices

Method

  1. Place the pork fat and belly cubes in a cold, heavy skillet.
  2. Heat gently over medium-low heat, rendering the fat slowly for about 8–10 minutes until the pieces turn golden and crisp.
  3. Drain off and reserve most of the rendered fat, leaving the crisp cracklings in the pan.
  4. Mash the warm cracklings with a fork, working in the garlic, paprika, salt and pepper.
  5. Stir in a few spoonfuls of the reserved fat until the mixture reaches a soft, spreadable consistency.
  6. Cool slightly, then spread generously onto slices of dark rye bread.
