Method
- Bring the water to a boil in a heavy-bottomed saucepan and add the salt.
- Pour in the buckwheat groats without stirring. Reduce the heat to low, cover, and simmer for 20 minutes until the water is absorbed and a hole forms in the centre of the mass.
- Remove from the heat. Add the lard or butter directly into the centre hole.
- Using a fork, crumble the cooked groats into small, loose grains, working quickly while hot.
- Cover again and let the žganci steam for 5 minutes off the heat before serving.
- Divide among bowls and pour warm milk generously over each portion.
