Ingredients

  • White bread slices — 4
  • Butter — 2 tbsp
  • Cooked, peeled shrimp, chopped — 300 g (10.5 oz)
  • Mayonnaise — 4 tbsp
  • Crème fraîche — 2 tbsp
  • Fresh dill, chopped — 2 tbsp

  • Fish roe (löjrom or similar) — 2 tbsp
  • Lemon wedges, to serve — 4

Method

  1. Toast the bread slices until golden, then butter while warm.
  2. In a bowl, mix chopped shrimp with mayonnaise, crème fraîche, dill and lemon juice.
  3. Season to taste and spoon generously over the buttered toast.
  4. Top each slice with a small spoonful of fish roe.
  5. Garnish with a lemon wedge and extra dill; serve immediately.
