  • Puff pastry, thawed — 2 sheets
  • Milk — 1 L (4 cups)

  • Cornstarch — 80 g (2/3 cup)

  • Heavy cream, whipped — 250 ml (1 cup)

Method

  1. Preheat the oven to 200°C (400°F).
  2. Prick both sheets of puff pastry all over and bake on a tray for 15-18 minutes until golden and puffed; cool completely.
  3. Whisk the egg yolks, sugar and cornstarch together until smooth.
  4. Warm the milk in a saucepan until steaming, then gradually whisk into the egg mixture.
  5. Return to the saucepan and cook over low heat, stirring constantly, until thickened into a smooth custard.
  6. Stir in the vanilla and let cool slightly, then fold in the whipped cream.
  7. Place one pastry sheet in a square baking dish, trimming to fit.
  8. Pour the custard cream over the pastry, smoothing the top.
  9. Top with the second pastry sheet.
  10. Chill for at least 3 hours until fully set.
  11. Dust with icing sugar and cut into squares before serving.
